Shop bought meatballs are often full of fillers (carbs) and these are so easy to make – and taste better. Served with Atkins penne they are a perfect low carb meal.
Cook the penne until al dente. Chop the red onion and then add half to a mixing bowl with the chopped chilli and minced meat. Combine well and form into meatballs. Place in the oven and bake for 20 minutes. Meanwhile add the other half of the onion to a frying pan and sauté for a few minutes, add the crushed garlic and cook for one further minute. Add the chopped red pepper, cook for a few minutes before adding the tinned tomatoes and warming through.
Take the meatballs out of the oven and place on top of the sauce and simmer for 5 minutes before sprinkling with parmesan cheese and fresh basil before serving, with the pasta
.
