Stuffed peppers are a traditional dish in southern Europe. Try this recipe with fresh herbs, parmesan and ground turkey and we’re sure this will be a recurring favorite.

  • ½ red bell pepper
  • 2 tablespoon parmesan cheese
  • 100 gram tinned diced tomatoes
  • 1 teaspoon garlic powder
  • 1 teaspoon mixed herbs
  • 1 egg
  • 100 gram ground turkey
  • 1 tablespoon olive oil
  • 1 clove(s) garlic

Preheat oven to 350 F/180 C. In a pan, sauté mushroom, onion and garlic in olive oil until veggies are soft; remove from heat. Meanwhile, in a medium mixing bowl, combine ground turkey, egg, garlic powder, Italian seasoning, salt and pepper. Add veggie mixture to turkey mixture and mix well. Stuff into peppers, then cover with tomatoes. Sprinkle with parmesan and bake for 50 mins.
